If this day should be hold in future, ingame, it should be represented by a pokemon.

How about you guys make your very own pokemon. Its not a real pokemon but one that was created by you? So on that day you have like 1/500 chance to encounter it and it is difficult to capture. No it does not need to be a legendary. Maybe a quest that can be done only on St. patricks day that leads to you finding the new pokemon who knows. It would be cool though creating your own pokemon for the different holidays lol.
